Mexican flavors in Epcot

It’s no secret that I love Mexican food, and it shouldn’t come as a surprise that every time I go to Disney World, I have to eat dinner in Epcot’s Mexico. This has been a tradition my family has followed since the very first time we went to Disney World when I was 5. Whenever I go to make reservations for our trip, the Mexico reservation is the very first one I make. A few years ago they opened a second Mexican restaurant, so I decided this year was finally the year to try it.

La Hacienda de San Angel is located right on the World Showcase lagoon, and is a perfect spot to watch their nightly fireworks, Illuminations. I didn’t think of it when I made the reservations, but seeing the sun set over the water was a nice consolation prize. We started our meal with tortilla chips and salsa (a spicy chipotle sauce and a green tomatillo sauce) as we perused the menu. Since we were on the Dining Plan, we were able to select an entreé and dessert. They have a tequila bar on-site, so naturally my husband and I started off with a margarita. I had the avocado margarita (super creamy and flavorful), and he had the blueberry pomegranate (nice and refreshing). My sister settled for an iced tea since she’s only 19.

When it came to making our dinner selection, we were all stumped. Everything sounded delicious, and we wanted to try everything. Eventually my husband and sister settled on the Puerco en Salsa de Mole Negro, which is roasted pork tenderloin with mole negro sauce, served with esquites (roasted corn), sweet potato mash, beans and vegetables. For myself, I went with the Arrachera, which is top sirloin served with spring onions, tamal with rajas, cactus leaves, and beans. Our table also had two big bowls of rice and beans, as well as some corn tortillas to make our own little tacos. The flavors of everything tasted truly authentic, and my favorite may have been the black beans and tamal that came with mine.

So much food!

You may be thinking to yourself, “Danielle, you said no meat in January! You’re a cheater!.” Why yes, yes I am. I knew going into the Disney trip finding vegetarian options at every turn would be difficult – and it was. There wasn’t one vegetarian option on La Hacienda’s menu, and while I know I could have gone out of my way to request something, because I’m not truly a vegetarian, I ordered off the menu. Disney does have plenty of veggie friendly options and I took advantage of them whenever possible, but I didn’t limit myself – I mean, it was vacation after all. I’ve found the main reason why I haven’t become a full-time vegetarian is the sometimes hassle of eating out, or eating at a friend’s – I especially don’t like to make a fuss when someone else is preparing a meal for me. That may seem like a cop-out, but it’s how I approach the situation. I’m planning to go an extra week into February to make it a truly vegetarian month.

But I digress – back to La Hacienda. We can’t forget about dessert! I decided to go with an apple empanada with caramel ice cream even though I was stuffed and couldn’t bare the thought of eating more. My sister had the same, and my husband ordered a fresh fruit tamale. Even though I only had a few bites, it was delicious and reminded me of an apple turn-over. The ice cream was the star, though, with ribbons of caramel throughout the rich ice cream. Yum.

The atmosphere is warm and inviting, and they certainly don’t rush you. At every restaurant we had a reservation for we arrived a few minutes early, and they were always ready to seat us. It was such a nice change of pace from restaurants around here where despite a reservation, you still wind up waiting. I’m definitely glad we decided to take a bit of a risk and book our traditional Mexico dinner at their new restaurant – it was a delicious change of pace.

I Scream for Coffee

When MomCentral contacted me with the offer to sample Starbucks’ new ice cream flavors as part of a blog-tour, I jumped at the offer! I remember discovering Starbucks and their frappucinos in middle school, and became immediately obsessed. One day I had two mocha frappucinos, and I had so much energy into the wee-hours that I rearranged my room. My parents awoke to a newly designed room, and a very tired Danielle.

Needless to say, finding out that they had frappucino flavored ice cream, my fiancé and I immediately went for the mocha flavor. My mom’s favorite ice cream flavor is coffee, so I grew up enjoying it as well. She loves the flavor because she loves her k cups. While I was tempted to go for the plain ‘ole coffee, I couldn’t pull myself away from frappucino. Even though this weekend was full of rain and wind, I couldn’t help but make some sweet treats. With the fear of power going out at any moment, I tried to make everything I could on Saturday. Thankfully when I awoke on Sunday we still had power, so I was able to enjoy some ice cream.

After sampling some on it’s own, I had a genius (well, I think) idea – ice cream sandwiches! Using graham crackers, the ice cream, and chocolate chips, I assembled these beauties simply by taking about 2-3 tablespoons of ice cream and spreading it on one graham cracker, placing the other graham on top, and sprinkling some chocolate chips around the sides. Super simple, and delicious!

The ice cream really does taste like their drinks, and considering how big a fan I am of Starbucks speciality drinks, I definitely plan on getting some more of these delicious ice cream flavors and making more treats. Perhaps a milkshake version of the mocha coconut frappucino? Yum!

Cajun Creole in New Brunswick

On Friday night, the fiancé and I joined a few friends to celebrate a friend’s new job, as the editor of New Brunswick’s Patch.com. Since the site officially launched on Friday morning, it was only appropriate to celebrate that evening. It was a nice way to kick off a new turning point in her career, especially because I know she’s worked really hard to get everything ready. I’m looking forward to reading the articles on the site, and I’m also looking forward to contributing! That’s right, you can now find this blog on New Brunswick’s Patch under their “Local Voices.” I’ll also have the opportunity to do some other writing (restaurant reviews, etc.) which I’m really looking forward to.

So, to celebrate we headed to The Old Bay in New Brunswick, which is a restaurant and bar serving up Cajun Creole cuisine. I’ve been a few times, but only to meet friends for drinks, so I was excited to try their food. So like I always do, I checked the menu ahead of time and was immediately drawn to their jalapeno corncake appetizer. Other than that, though, I had no idea what I’d order, which is rare. So, it wound up being a game time decision!

I decided to go with the Andouille crusted red snapper, that’s served over edamame succotash and wilted spinach. I was hoping it would have a little kick from the andouille, but that was something a dash of hot sauce easily fixed. The edamame succotash was amazing – I would have ordered an entire bowl of it if I could!

The fiancé decided to get two appetizers as his dinner, and went with the Bayou fish tacos, and their version of beef pies, which were both really good (of course I had to sample them!).

I washed everything down with some Victory Summer Lovin’ ale, which was nice and light, crisp, and fruity – just the way I like my beer!

I would defintely recommend The Old Bay – especially if you’re looking for a bunch of appetizers and drinks. Plus, if you stick around on most nights after 10pm they have drink specials, and live music!

Product Love

I don’t really do product reviews unless I’m given a product to try for that sole purpose. However, sometimes I find something really yummy, fun, useful, or just worth sharing. In this case, I really just feel the need to share some of the new things I’ve tried in the past few weeks that I’ve really enjoyed.

First, I had the opportunity to try Nature’s Pride Hearty Wheat with Flax bread, courtesy of the Foodbuzz Tastemaker program. By opting in I was sent a loaf and a few kaiser rolls to enjoy. It just so happened that I was planning to make sandwiches that week, so it wound up being very convenient! My fiancé has been requesting his sandwiches on this bread recently, so he’s definitely a fan! Since the slices are on the bigger side, I’ve made quite a few open-faced “grilled cheese” sandwiches of sorts. A perfect afternoon snack!

I also made a trip to Trader Joe’s where I picked up my first loaf of Ezekiel Bread. Yes, it’s been a carb heavy few weeks! So many blogs that I read seem to all enjoy some Ezekiel bread with a form of nut butter on top of it pre-run, and also just through the course of other meals. Since I had never heard of the bread until recently, I decided to check it out. I grabbed the Ezekiel 4:9 bread, and eagerly made a peanut butter, almond butter, and jelly sandwich with it. YUM! I’m a big fan of super grainy breads, so this was right up my alley. I know it’s an acquired texture/taste for some, but I really enjoy it; I remember back in the day when my mom would get fresh bread and make sandwiches from it as a treat, I always requested the uber-grained breads. Even though the slices are smaller than typical sandwich bread, it’s still really filling because of all the grains. I’ve been savoring this loaf – I don’t want it to end!

Finally, after seeing so many tweets and blog posts about the Chobani lemon flavor, I just had to pick some up for myself! I was unsure as to just how lemon flavored the yogurt would be, as I enjoy lemon to an extent, but find that it can easily be overpowering. I mixed in some golden flaxseed for a little texture, and it was absolutely delicious! I absolutely love Greek yogurt, and Chobani is definitely my favorite brand (as I’ve read is also the favorite of quite a few other people!). I was always a big vanilla fan, and also the plain to replace sour cream, but I think I might have found a new favorite flavor! I can’t wait to get back to the grocery store for more.

I have a ton of other favorite foods / products that I find myself buying each week, but these three are the newest additions to my rotation. I think I’m going to start a weekly post of some favorites of mine, and since I’m always discovering new things, I doubt I’ll run out!

Cooking creme and kitchen time

On Monday, I had grand plans of whipping up some huevos rancheros for Meatless Monday, but my plan was foiled when on top of my stressful day, I came home to a note from a professor telling me that my latest homework assignment was incorrect, and in order to get points, I should consider doing it over again. After a serious breakdown (the original assignment took me 4 hours!), I got crackin’ while the fiancé threw together some tortellini for us. I took a break for dinner, and then got back to the homework, finishing in about 2ish hours. So, hopefully I’ll get to try my hand at the recipe I had brewing next week.

I always hate when I miss a day in the kitchen, so I was happy to have time to make something on Tuesday night. After seeing quite a few commercials for the new Philadelphia Crème, and also receiving a $1 off coupon, I decided to pick some up. Of course, I gravitated towards the “Santa Fe” style, and thought it would make a great creamy and cheesey (and quick!) pasta dish. I’m always up for trying new things, and I think this cooking crème is a nice substitute for a healthier version of an alfredo. It comes in four different flavors, so it’s really versatile. The little tub even came with some recipe ideas attached, which was pretty neat!

I’m happy to report that since I started running last week, I’ve tackled 2, 3, and 4 miles! Even though it’s been extremely difficult to breathe (apparently my lungs forgot how to work under pressure), I’ve been able to keep it under 9 minute miles, without pushing myself. It’s nothing spectacular, but considering I really haven’t run since January, and throughout December only ran maybe 3-4 times, I can’t complain! The discomfort in my foot isn’t completely gone, but it goes away within a mile or so of starting the run, and isn’t a pain so much as it just feels “weird.” I’m hoping this means I can finish the race on April 17th (hey, I want that medal!), and then take a little time off before starting again to train for the big guy, the Philadelphia Marathon. Fingers crossed!

But back to the food… I highly recommend checking out the Philadelphia Crème if you’re looking for a quick dish that easily adds a lot of flavor. I’m not going to lie, I was pretty skeptical (and a little weirded out) of the idea at first, but I’m glad I decided to give it a try. It was quick and easy, which has been all I can afford to devote my time to the past few weeks. The semester is thankfully coming to a close in the next few weeks, so hopefully before the next one starts up (it’s never ending!) I’ll get to spend some more time in the kitchen. If only there were more hours in the day…

Baked Southwestern Pasta Skillet
-Serves 4-

Ingredients:
2 cups pasta (I used elbow, you can use any kind you’d like)
3/4 cup black beans
3/4 cup corn
1 can diced tomatoes & jalapenos
1 small yellow onion, diced
2 Tbsp cooking oil
1/2 cup shredded cheese (I used a jack and cheddar combo), plus another 1/2 cup
1/4 cup + 1 Tbsp Philadelphia Crème – Santa Fe style
1/4 cup Panko bread crumbs

Directions:
1. Preheat oven to 400 degrees
2. Prepare pasta according to package
3. Meanwhile, heat oil in skillet, add onion, and cook for 5 minutes. Then, add black beans, tomatoes, and corn, cooking for an additional 5 minutes. Set aside.
4. Once pasta is fully cooked, combine in skillet with sauteed mixture, add Philadelphia Crème and 1/2 cup of cheese, making sure to combine evenly.
5. Transfer pasta to a greased baking dish, top with bread crumbs and bake for 10 minutes. Top with remaining cheese, and bake for an additional 10 minutes.

Date Night

Even though my fiancé and I work together, we still sometimes feel like we don’t spend time with one another… quality time. We work in different departments and will usually see each other just for lunch. Also, by the time we get home, I’m usually in the kitchen while he’s catching up on the latest news, and then I retreat to do homework.

So, we’ve been toying with the idea of a monthly (at least!) date night where either of us plan the evening, and it’s just the two of us. Saturday was my fiancé’s turn, and he decided on dinner and dessert out. Since it’s been nice the past few days, we thought a trip down to Princeton would be a good change of pace; it wasn’t raining, and was around 45-50 degrees, so we were more than okay with having to park and then walk to our destinations. There are a ton of restaurants in the Princeton area, so we had some trouble deciding on where to eat.

After perusing a bunch of menus, we decided on Triumph Brewery, a place we’d been to before (only once), and really enjoyed. We arrived around 7p, and were told there would be an hour wait. It worked out, though, because we decided to head to the bar and get ourselves a beer. I went with the Honey Blonde, and fiancé got an Amber Ale – both were really good. Unfortunately we found ourselves next to a lonely talker, and instead of getting to talk to one another, we fielded questions and comments from him. Thankfully the wait wound up being only about 25 minutes, so we were able to sneak off to our own table.

We started off with their hummus and pita, and it was delicious. Perfectly creamy with a little zing of spice and lemon, and the pita was still warm. I could have eaten just that for my meal and I would have been satisfied.

I decided to get the smokehouse panini, which was a ham, turkey, gouda, roasted tomato, onion, and chipotle honey mustard, served with fries. I am in love with gouda and honey mustard sauce, so this was perfect for me. It actually took me back to my college days, where at The University of Scranton in their old cafeteria they had a “Sandwich of the Day” section during lunch with a delicious panini that had gouda and honey  mustard.

My fiancé went with the epic burger. I mean, how could you not get a burger that is apparently epic? It was quite a burger… one where once you pick it up, there’s no stopping until you’re done. It included pork belly, caramelized onions, fried egg, truffle aioli, mornay sauce, and a side of fries. Watching him tackle that was entertaining.

We washed both of our meals down with an Irish Red Ale (for me), and a Roggenbock (for the fiancé). Even though I was stuffed to the gills, we had to press on to our next destination… The Bent Spoon.

I’ve heard nothing but wonderful things about The Bent Spoon and it’s unique ice cream flavors, so I just had to check it out. When we arrived, the line was out the door! I had plenty of time to decide on a flavor, and went with a small cup (which is two scoops that you can mix and match) of Hazelnut Streak, which had yummy chunks of hazelnuts with dark chocolate streaks mixed in. My fiancé got the coffee cookie as a shake.

All I can say is yum. As you can see by the above picture, there wasn’t even enough time for me to snap a picture before it was gone. Even though I was full, I ate almost the whole thing. They have really interesting flavors, like garam masala (my favorite spice blend!), coconut, winter squash, lemon poppy seed, etc. I would have tried them all if I had the room in my stomach. They also had adorable looking cupcakes that I just have to go back and try. I’m afraid I might become a frequent visitor this summer.

I think it’s safe to say our date night was a success. It was a nice, laid back night out enjoying yummy food, spent with my favorite guy. What more could I ask for?! I can’t wait until next month!

Coconut Oil and No Bake Goodies

After seeing Foodie Fresh’s awesome month of coconut giveaways from Tropical Traditions, I decided to head over to their site to check everything out – I was totally intrigued by their coconut peanut butter. I stumbled upon a section where you could sign up to review a product of theirs, and I jumped at the potential offer. I love coconut, and seriously would have been happy with anything they sent. So, when I received an e-mail that I was selected and would be receiving a 32oz. jar of their Virgin Coconut Oil, I was psyched.

This recipe comes from Oh She Glows, and it looked absolutely amazing. When I first saw it, I didn’t have coconut oil, so I was a bit disappointed I wouldn’t be able to make it, since she explicitly noted that other oils might change the flavor. As soon as I got the Virgin Coconut Oil from Tropical Traditions, though, I knew I could make these delicious coconut macaroons.

The coconut oil is delicious. Like I said, I’m a huge coconut fan, and even though I’ve never knowingly had anything with coconut oil in it, it really adds a nice hint of coconut flavor. As soon as I opened the jar I could smell coconut, and couldn’t wait to get it into liquid form (only needed about 20 seconds in the microwave) to devour it. I’m so excited I have such a large jar, because I’m definitely going to use it in more baked goods in the future!

And the best part about this recipe? The whole thing took me about 5 minutes, and they were ready. If I didn’t have the little bit of self-control I do possess, they would have been devoured even faster. The only change up I did was instead of using almond milk, I went with coconut milk for added flavor, and also that it was the only milk in the house. I wonder if I could somehow turn these into peanut butter, coconut, and chocolate macaroons…

Dinner at Disney’s Yacht Club – Beaches and Cream

On the second night of our trip, we decided to tackle the infamous Kitchen Sink ice cream sundae at the Yacht Club’s Beaches and Cream restaurant. The restaurant is a typical burger and ice cream joint. Since we hadn’t yet eaten dinner, we decided to first all order burgers. Their burgers are great, perfectly cooked with a generous amount of toppings (yes, I like a lot of lettuce, tomato, and onion on my burger!) and they come with yummy fries. While I enjoyed my dinner, I immediately regretted it upon diving into the Kitchen Sink.

We weren’t the only people in the small restaurant (no more than 12 tables, and a few counter service seats) to order the Kitchen Sink. There were a few families, and a group of 5 women next to us that also ordered it. The group next to us was smart; they only had a few sides to hold them over (french fries, onion rings, and chili) before getting started on dessert. Not wanting to miss out, we each had a regular full meal first. The menu says it serves 4, but let me tell you, it’s more like 6-8 people that are really interested in eating a lot of ice cream. Multiple scoops of ice cream, an entire can of whipped cream, brownies, angel food cake, and more. The mere thought of it is making my stomach hurt.

We got to work right away, after the fun announcement that we’d ordered one. We really enjoyed it for those first few bites, spinning it around so everyone could sample the different ice creams. Eventually (and rather quickly), we realized we had bitten off way more than we could chew. My fiancé tried to power through, but as the ice cream melted and it became soupy, it was all too much for us. Since we were to run a half marathon in two days, we figured it was best not to force ourselves into an ice cream coma.

It was A LOT of ice cream. There were 4 of us, and we all love ice cream. But it was way too much for us. However, being on vacation sometimes makes you do crazy things. And if you’re in the mood to get your ice cream on and enjoy the magic of Disney, go for it! It’ll set you back $28, but it’s a fun experience, as long as you know when to stop. If you aren’t interested in stuffing yourself to the gills with ice cream, I definitely recommend any of their other ice cream treats – everything looked amazing.

Dinner at Via Napoli in Epcot’s Italy

Our flight down to Orlando was super early – we were up at 3:45a to head to the Philadelphia airport after staying the night at our friend’s. Our flight was at 7a, and we were in sunny Orlando by 9a. We headed right to our hotel, Port Orleans Riverside, via Disney’s Magical Express bus. This seamless process allowed us to check in then head right to Epcot, instead of needing to wait for our bags (they deliver them right to your room!), or find transportation.

We spent our day exploring all of the countries, and riding Test Track, Spaceship Earth, Mission Space, and all the other fun rides Epcot has to offer. We also spent some time trying to figure out the race route for Saturday’s Half Marathon. After a full day of exploration, we ended with dinner at Via Napoli in Epcot’s Italy.

Our meal plan offered one quick service meal (meaning counter service similar to a cafeteria with trays) that included a drink, meal, and dessert, a table service meal that also included a drink, meal, and dessert, and one snack per day of your reservation. Let me tell you – it’s A LOT of food! I didn’t ever feel like I didn’t have enough food – it was more than enough!

Dinner was quick – three of us ordered pasta, and our one friend ordered a personal pizza. They noted that the food would be brought out at different times just due to the cooking times, but it was literally a two minute difference – we barely noticed! Our whole meal was complete in about 45 minutes; they weren’t messing around. Even though it was quick, the quality of the food as well as the service, didn’t suffer.

I ordered the eggplant parmigana, which came with a side of spagetti that was essentially a spagetti cake – it was pretty awesome!

For dessert, we all ordered the zeppolis with melted chocolate and whipped cream. They were served in a neat cone, and it felt like they were never ending! Even though I was stuffed from the eggplant and pasta, I couldn’t help myself and eat every single one. They were delicious! I think these cones are awesome, as does my fiancé, and I really want to buy some, but I don’t know where they’re sold – any ideas?

We were all quite full after dinner, and resolved ourselves to one more round of the World Showcase before heading back to our hotel. Our next day was to be jam packed with a trip to ESPN’s Wide World of Sports complex to grab our race bibs and goodies, as well as a day at Hollywood Studios.

It’s safe to say I was fed very well this trip, and didn’t spend a second hungry!

Product Review: Ghiradelli Luxe Chocolates

Like I mentioned a few weeks ago, blogging rules. Specifically, food blogging. As a Featured Publisher and member of the Tastemaker program on Foodbuzz, I get to try yummy things every so often. A few weeks ago, I got a sample pack containing three flavors of Ghiradelli’s new luxe line of chocolates.

I’m a huge chocolate fan, so I jumped at the offer for a sample. I’m not big on candy, but I’ll never turn down chocolate. I especially won’t turn it down when there’s nuts involved. The three pieces I received were milk, hazelnut, and almond. Even though they were just little squares of chocolate, being the good fiancée that I am, I shared.

I was least excited about the milk chocolate, and most excited for the hazelnut. I’m a serious fan of hazelnuts, and it’s my go-to coffee flavor. I like almonds, too, but wasn’t expecting anything special, as a lot of chocolates have an almond variation. While milk chocolate is the most common, I always gravitate to dark – milk is just average in my eyes. So I started with my least favorite, and it was a great start. I knew that even if it didn’t get any better, it was at least pretty darn good! As I continued on to almond, the flavor grew. For both the almond and hazelnut, there was actually a lot of nut in the chocolate. Usually, the additional flavor is minuscule, but Ghiradelli didn’t hold back. Of course, hazelnut wound up being my favorite, but it barely won out over almond. While savoring each square, I began dreaming up recipes where these chocolates could be melted down and combined into pure deliciousness.

After sharing with my fiancé, I was disappointed there wasn’t more. The chocolate is super rich and creamy, in a simply decadent way. It definitely earned it’s “luxe” name. I’m looking forward to getting some to enjoy as a treat every so often!
