‘Tis the season… for pumpkin flavored drinks

While we’re slowly but surely coming down from our 90+ degree summer days, it’s clear that everyone has fall on their minds. I can’t begin to tell you how many blog posts I’ve read within the last two weeks boasting delicious pumpkin recipes and fun foods including the oh so yummy fall flavor. Even though it’s only the third week in September, cool crisp weather and warm flavors are definitely on their way.

For me, fall usually means beautiful colored leaves (that need to be raked, boo), the perfect clothing weather (not too many layers, but just the right amount), perfectly ripe apples, and of course, pumpkin! To be honest, I wasn’t always a huge pumpkin fan. Matter of fact, for a large part of my life I completely avoided it. Yup, that’s right – I turned down pumpkin pie (gasp!). However, last year, my taste buds seemed to change, and I hopped right on the pumpkin loving bandwagon. It started innocently with a Pumpkin Spice Latte from Starbucks, and continued from there – pumpkin bread, pumpkin brownies, pumpkin french toast, pumpkin beer… you get the point.

So on Sunday, I started my pumpkin fix of the season off right – the first stop was to get a pumpkin spice latte from Starbucks! I can’t wait to get myself more of these badboys.

From there, my fiancé and I headed to a local wine store that has a pretty decent beer selection as well, and picked ourselves up TWO types of pumpkin beer! First, we grabbed a six pack of Shipyard’s Pumpkin Head, which we both had for the first time last year and loved. We also grabbed a four pack of Weyerbacher’s Imperial Pumpkin Ale, which neither of us had tried before. The store actually had a few other options (such as Dogfish Head’s Punkin Ale), so we’re looking forward to heading back after we finish these two.

Even though both of the beers are pumpkin flavored, they  are definitely distinctive in their own rights. The Shipyard has a strong cinnamon flavor making it sweet, while the Weyerbacher has a more nutmeg flavor, making it a little more savory. I really enjoyed them both, and even though it’s Monday morning, I could definitely go for another one right about now!

Aside from drinking pumpkin, I have a ton of recipes up my sleeve courtesy of fellow bloggers that I need to try. Everything from pumpkin pancakes, pumpkin macaroni and cheese, pumpkin overnight oats, to pumpkin smoothies. It seems like pumpkin puree with some spices can really be added to almost anything, and I’m more than okay with that.

Baked Goods and (Vibram) Five Fingers!

For quite awhile now, both myself and my fiancé have been eyeing up Vibram Five Fingers. It seems like they’ve become a hit over night. I realize they’ve been around for awhile, as a lot of the running blogs I read have been jockeying them for quite some time, but the craze has definitely hit a high. My fiancé in particular has been interested in barefoot running for quite some time now. I myself, however, remember seeing a woman running through the park about two years ago barefoot and thinking to myself that she was crazy. After reading more, though, I was willing to give them a shot.

Apparently these bad boys are hard to come by. Luckily, one of the shoe stores in my hometown has been selling them for awhile, and even though they’ve been going like hotcakes (mmm, hot cakes), they just so happened to have a pair for both my fiancé and I! So, on our very last summer hours of the year this past Friday, we headed to pick up a pair for ourselves. We wound up getting the KSO’s in black, since they were listed to be good for everything; running, light hiking, water sports, every day use, etc. I expected to have a difficult time getting my toes into their individual pockets, but it was pretty easy. Maybe it’s because I’ve worn toe socks before, or maybe it was because I had an audience and felt like I had to succeed at the first try. Either way, they weren’t nearly as difficult to get on as I had imagined.

So, we set out for a short, easy, two mile run this morning to try them out. I had read on a lot of blogs to ease into them – no more than a mile or so was advised just to get yourself used to them. I had heard you’d feel muscles in your legs working you never knew you had. Needless to say I was a little intimidated by them. We decided to just feel the run out, and we wouldn’t do any more than two miles, even if we were feeling great. The first mile was a bit awkward – you could feel everything, so I really felt like I needed to watch where I was going. It also sounded weird, as though I was slamming my entire foot down with every step. I know that’s not what I was doing, though, because if there was one thing my mother taught me, it was not to slam my feet when I walked.

When the first mile marker popped up through my MapMyFitness, I was shocked that we did it in a 9:10/mile pace. It honestly felt SO slow. Granted, for a lot of runners out there that is slow. But last time I was training for my first half marathon, most runs were at a 9:40-10:40/mile pace, and that felt far from slow. After getting through the initial awkwardness of the first mile, our second mile felt even better. We ran it sub-9, and it seemed as though our legs and feet were finally communicating with one another and getting into the swing of things. I definitely think we could have kept going, probably for another 2+ miles. Being cautious, though, we decided to call it quits for the day, but we’ll be back out for a 4 miler tomorrow! So far, so good.

After the run, I got back to my second love – the kitchen. I quickly started whipping up Chocolate Chip Pretzel Bars from Baking Serendipity, to bring to a pool party. Of course I’ve started to make a name for myself in bringing baked goods to parties, so I always have to make sure I’ve got something with me. These seemed different, and pretty straight forward. Since I was pressed for time (as always) the simplicity was much appreciated.

I think I’m finally getting the hang of creaming things, too. I still cringe when I see that listed as part of the directions, but I’m a little more confident. Up until recently every time I turned on my hand mixer, bits and pieces of butter and other ingredients would go flying. So today I decided to hold the bowl in the middle of the kitchen (or as far as the cord would reach) so that way it would only go on the floor, or me. Of course I got it on both, but it was definitely a lot less than usual. I really just need to get married so I can get myself  a Kitchen Aid Stand Mixer.

The bars have a brownie-like consistency (and shape), but are essentially chocolate chip cookies with pieces of pretzels in them. I for one am a huge fan of the salty and sweet combo, so this was right up my alley. Everyone at the pool party seemed to feel the same way too! Unfortunately they were a little difficult to cut (the pieces of pretzel were hard to get through, some spots were crumbly) so they weren’t cut evenly. No one seemed to notice, though, and they were pretty much all devoured. They would probably be great with different chips too – white chocolate, peanut butter, butterscotch, etc… the possibilities are endless! We have some leftovers, and I’m looking forward to enjoying them as a snack this week.

Chocolate Chip Pretzel Bars

Ingredients:
2 1/4 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup (2 sticks) butter, softened
3/4 cup sugar
3/4 cup brown sugar
1 1/2 tsp. vanilla
2 eggs
2 cups semi-sweet chocolate chips
1 (heaping) cup broken pretzel rods

Directions:
1. Break pretzel rods and set aside.
2. Cream butter, sugars and vanilla. Add eggs, one at a time, mixing well after each addition. In a separate bowl, mix flour, baking soda and salt. Add gradually to wet ingredients, mixing well.
3. Fold in chocolate chips first, then pretzels, being careful to stir the pretzels gently to keep from breaking them.
4. Spread batter evenly into a greased 9×11″ baking dish and bake in a preheated 375 degree oven for 35 minutes, or until a toothpick inserted in the center comes out clean.

July Fourth means 4 miles of agony and rum and coke brownies!

Ahh yes, the fourth of July. The day of America’s birth, and an awesome excuse to relax, drink, barbecue, and enjoy fireworks.

Sunday was Cranford’s annual Firecracker Four Miler race, which just so happens to be the first running race I ever competed in, last year. The race starts at 9:30am in Nomaheagan Park, and by the time we got there at about 8:45a it was already a good 80 degrees. Most of the race is in the sun, and since it’s 4 miles instead of the usual 5k (3.1), they didn’t have a water station until 2 miles in. Needless to say the race was a struggle from the beginning, but I somehow managed to beat least year’s time, and PR my 5k time in the process at just under 26 minutes.

For signing up early, we got a t-shirt and a sweet pint glass, just as we did last year. We’re starting a nice collection! In the end, I finished in just under 34 minutes, with the “official” (the timing system was a little shotty) time of 34:50, about an 8:40/mile pace, and my fiancé finished in just under 32 with 31:45 (also a PR). I think we wound up spending the rest of the day trying to rehydrate, which was probably unsuccessful.

After the race, we rushed home so I could get started on the treats I was going to bring to our next barbecue adventure. This time, I went with a recipe I had found on Serious Eats, from a book called Boozy Baking. Seriously, I need that book. I love bringing alcohol infused desserts to parties where drinking is involved, because it’s just so fun. These particular brownies were called Cuba Libre Brownies, but I prefer to simplify the name, and just call them Rum & Coke Brownies. Yes, there is rum, coke, lime zest, and bittersweet chocolate in these bad boys – and they were awesome! The lime zest was really refreshing, and they’re definitely the booziest treats I’ve made so far, so keep that in mind if you decide to take a stab at them!

Rum & Coke Brownies (aka Cuba Libre Brownies)
– serves about 24 brownies –

Ingredients:

For the brownies:
11/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
10 ounces bittersweet chocolate, chopped
1/2 pound (2 sticks) unsalted butter, softened
1 cup sugar
3 large eggs
3/4 cup carbonated cola
1/4 cup white rum

For the frosting:
1/4 pound (1 stick) unsalted butter, softened
3 tablespoons cocoa powder
1/3 cup white rum
4 cups confectioners’ sugar
Freshly grated zest of 2 limes

Directions:
1. To make the brownies, position a rack in the bottom third of the oven. Preheat the oven to 350°F. Butter a 9×13-inch baking pan or spray it with nonstick spray. Dust with flour and tap out the excess. Set aside.
2. In a medium bowl, combine the flour, baking soda, and salt.
3. Place the chocolate in a heatproof bowl set over a pan of gently simmering water. Stir constantly until the chocolate is almost melted. Remove the bowl from the heat and stir until the chocolate is completely melted.
4. In a large bowl, beat together the butter and sugar with an electric mixer until light and fluffy, about 3 minutes. Add the eggs one at a time, beating well after each addition. Add the melted chocolate and beat until well incorporated, about 2 minutes, scraping down the sides of the bowl as necessary.
5. With a wooden spoon or a spatula, gently stir the flour mixture into the chocolate mixture just until combined. Gently stir in the cola and the rum; then pour the batter into the prepared pan, smoothing it to the edges.
6. Bake the brownies until a toothpick inserted in the center comes out clean, about 35 minutes. Cool the brownies in the pan completely.
7. To make the frosting, in a large bowl beat the butter, cocoa powder, and rum with an electric mixer until smooth. Slowly add the confectioners’ sugar, one cup at a time, beating until incorporated after each addition.
8. Spread the frosting over the cooled brownies. Sprinkle with the grated lime zest, cut into squares, and serve.

Pelican Bay Key Lime Cupcake Mix: Refreshingly Delicious

One of my birthday gifts from a co-worker included a box of Pelican Bay’s key lime cupcake mix. Since I was going to a barbecue at her place on the 3rd, I figured it’d be nice to bring the cupcakes along with me, so she could enjoy some of my present. I was also able to transport them in my cupcake carrier, which was so convenient!

The mix itself was super easy – there were just two bags inside the box, one for the cake, and one for the frosting. Aside from the mix, I only needed some eggs, milk, oil, cream cheese, and butter. After combining all the ingredients I was able to sit back and relax; something that was more than welcomed in Saturday’s heat! I decided to add a little pizzaz  to the cupcakes by adding some sprinkles I had left over.

Everyone really enjoyed the cupcakes, and it was nice to have minimal work in the kitchen. I love baking, don’t get me wrong, but I always feel like I make a mess; so many bowls, spoons, and measuring cups, followed by the waiting (I’m very impatient). I haven’t been a fan of cream cheese based frostings since I got sick from a red velvet cupcake at Phoebe’s in Chicago, so I’m wary about making them. However, these had just the right amount of cheese and sweet ratio, and the lime was potent but not over the top, leaving the cupcakes on the lighter-side which was nice since Saturday was so warm.

I’m interested to see what other mixes they have, and not just cupcakes but cakes and cookies, too! Unfortunately I have a few left over that I was forced to bring home because they still had so much food at the barbecue, and I then on Sunday after our four mile race, I started on some rum and coke brownies for the next barbecue (post coming soon!). Oh, and I still have birthday cake left over. Looks like I’ve got some serious eating to do!

A Foodie Birthday!

Ahh yes, birthday time. Monday (6/28) I celebrated the big 24 (boooooring!), and received a lot of foodie (specifically baking) prizes. Yes, you read that correctly. I do not call gifts presents, rather prizes – it sounds more fun!

Most of the food related gifts actually came from my co-workers, and they’re smart; hopefully their prizes will get me in the kitchen, and therefore bringing in left over goodies to share with them. Good thinking! Anyway, in addition to the amazing MacBook from my fiancé that I’m currently using to type this up, an awesome new Coach bag, Forever21 gift card, shirt and earrings from my parents and sister, I got the following foodie items:


– A sweet set of baking dishes, and a Pyrex measuring cup, which we somehow don’t have. This is going to come in handy!


– I’ve been eyeing this cupcake recipe book for awhile. Everything is SO cute. I hope my lack of artistic ability will some how not transfer over to these cupcake decorations


– I’ll be making these cupcakes this weekend to bring to a 4th of July BBQ. Hopefully they are yummy!


– How can you go wrong with this?! Now I have an extra cupcake pan (having only one is annoying), a mini cupcake/muffin pan, AND a carrying case? SCORE!

So as you can see, I was spoiled with my foodie (and non-foodie) prizes! By the end of the week I’ll hopefully have used the pie dish, cupcake mix, and cupcake carrier. I’ll definitely be reporting back on those!

As for the eating aspect of my birthday, that was equally delicious. It started off before work with some Dunkin Donuts (iced coffee and a jalapeno bagel twist to be exact). It was later followed up with a junior homewrecker with tofu burrito from Moe’s Southwest Grill. Then, going for a double-dose of Mexican (how could I resist?!) the family took us to Jose Tejas, one of my favorite Cajun Creole/Mexican joints (you can read about the restaurant here)! After that we had some cake – a chocolatey moussey ganachey coconutty slice of heaven. Needless to say I had to roll myself into bed after eating all that!

I’ll take you to the Candy Shop

Yes, those are in fact lyrics from a 50 Cent song, that I listened to many a times in a crowded Scranton basement in college. Candy Shop also happens to be the sub-brand of the Duncan Hines brownies I made tonight. I know, you’re thinking I’m a total cop-out for using a brownie mix instead of making my own while having a food blog. Well while wandering down the baking aisle at Target today, I stumbled upon a peanut butter brownie box and had to have it. Sometimes making mix out of the box is just as fun as making them from scratch? And by fun, I really just mean easy.

My fiancé has a seriously delicious salmon recipe that he got from his dad. It’s super easy, and I beg him every now and again to make it. So, after some coaxing this past week, he gave in and made it for me tonight, after letting it marinate overnight. We paired it with rice, and boy did it hit the spot! While I’m forbidden for sharing the recipe (so unfair, I know) I can at least show you how delicious it looked!

Back to the reasoning behind the post, the peanut butter brownies! I always find it interesting that brownie mixes provide you two options; one for fudgey brownies, and one for cake-like brownies. I always think to myself, “who wants cake-like brownies?! Fudge is where it’s at!” I suppose there are some people that would disagree, but I always go for the ultimate fudge-factor. That’s why I’m a huge fan of Ghiradelli’s mixes. For something that only required me to combine the brownie mix, a little bit of oil, water, and an egg and throw it in the oven for about 30 minutes, I’m impressed. Sure, I probably could have made better brownies myself, but it also would have taken me a lot longer. Sometimes a little sacrifice in authenticity is allowed for a quick treat on a weeknight. These badboys will be an excellent afternoon snack tomorrow during my 2:30pm “I really still have 3 more hours of work?” wallowing.

Chocolate Espresso Hazelnut Cupcakes

I decided to get adventerous with the making of these cupcakes. I took a base recipe from Recipe Girl and kind of ran with it. I think the hardest part was coming up with a name for my creation that wasn’t miles long!

I’d been holding off making baked goods for a few reasons. One, being in super-saver mode I didn’t want to buy ingredients I didn’t have and all of the cupcakes on my to-do list had extra ingedients. I also hate baking when I don’t have somewhere to bring the goodies because some always go to waste.

So, since we saved a ton of money in groceries last week and were heading to a BBQ on Monday, I thought it was a perfect opportunity to make some cupcakes! While I made the cupcakes, my fiancé got started on his second batch of beer from the kit I had gotten him for Christmas. We had quite a nice little domestic Sunday afternoon.

The chocolate cupcake recipe I found actually mixed all of the ingredients together in a blender. As someone that still doesn’t have a stand mixer (hello wedding registry!), the idea of not having to do it by hand was amazing. I literally poured all of the ingredients into the mixer, turned it on, and waited. I did assist with the mixing a bit, but that’s really just because I’m impatient.

I decided to snazz up the regular chocolate recipe by adding espresso and hazelnuts. I was a little unsure at first if I should have just used hazelnut coffee, but I’m glad I went with the espresso and mashed hazelnuts. I didn’t brew the espresso, I just threw it in as a dry ingredient.

For the frosting, I decided to tackle a buttercream again. This time the hand mixer was a little nicer, and only spewed a bit of butter. All was well until I got to the actual icing of the cupcakes. I must have misplaced a piece of the pastry bag I just bought, so it’s basically unusable. We picked a tip and used a rubberband to hold it in place, but the tip was definitely too small to ice the whole cake. So I wound up just using a spoon and doing my ugly version. I really need to take a class or some lessons to get better at that!

I found the frosting recipe from a blog called Ming Makes Cupcakes, that has a ton of numbered cupcake recipes, and I seriously want to make them all. But I figured I’d do just one at a time.

They are definitely decadent cupcakes. I made them normal size and the batter only produced 10 cupcakes, so I made two batches and the icing was able to cover all 20 cupcakes. I definitely think they’re a one and done type cake, which I’m more than okay with!

Everyone at the BBQ that tried them was really impressed. It’s always nice to hear “oh man, these are awesome! Who made them?!?” when you’re at a gathering. My fiancé made a point to say he really enjoys when I deviate from the recipes and make them my own. I’m definitely becoming more comfortable with the idea of my own(ish) recipes, and I love it!

The base cupcake recipe is great if you’re pressed for time. You can pretty much add anything to snazz them up from regular chocolate. As for the icing, we all know buttercream can be made into pretty much any flavor, so get creative!

Go-To Chocolate Cupcakes
– makes 10 cupcakes –

Ingredients:
1 cup flour
½ cup unsweetened cocoa powder (not Dutch process)
1 cup granulated sugar
½ tsp baking soda
¼ tsp salt
¾ cup hot water
½ cup canola oil
1 large egg
1½ tsp vanilla extract
1/3 cup of espresso*
1/3 cup chopped hazelnuts*

Directions:
1. Preheat oven to 375°F. Line 12 regular-sized muffin tin with paper or foil liners.
2. Combine flour, cocoa, sugar, baking soda, and salt in a blender. Cover with the lid and blend on medium-speed until blended. Pour in the water, oil, egg and vanilla. Cover with the lid and blend on medium-high speed until smooth and well-blended, stopping to scrape down the sides once or twice.
3. Pour into prepared pan/cups, dividing evenly. Bake until toothpick inserted in center of one cupcake comes out clean, 15-17 minutes.
4. Transfer to rack to cool for about 10 minutes, and then carefully remove cupcakes from the pan and set them on the rack to cool completely before frosting

* are my additions to the base recipe!

Bailey’s Buttercream Frosting

Ingredients:
1 stick butter
4 cups confectioners sugar
1/4 cup Bailey’s Irish cream
1 tsp vanilla
1 tbsp milk
2 tbsp coffee (I used espresso)

Directions:
Blend all ingredients together
Frost cupcakes!

Boozey Cupcakes Part 2: Jello Shot Style

On Saturday, my fiancé had his birthday party, which was dessert themed. Being that it was a party and some type of confectionery treat needed to be made, I went the route of a booze-infused cupcake. After my New Year’s Eve hit with my Guinness & Bailey’s buttercream cupcakes, I figured I could give a new recipe a shot (no pun intended!).

Because we were hosting the party at our place and spent all of Saturday morning & afternoon cleaning and running errands, this recipe was perfect because it called for cake mix. I know that’s cheating, but we were seriously crunched on time! So after making the cupcakes from the box, I moved on to the Jello, by making it half with water, and half with coconut rum. Once the cupcakes cooled, I simply spooned the mixture over them. Be smart about this though because it makes a mess! I thought ahead and put down some paper towels on a serving tray first, and I’m really glad I did. I left the rest of the Jello to congeal in the fridge if anyone wanted it later.

The hardest part of the recipe, you may ask? Finding the cups to put them in! They’re the paper medicine-like cups; a smaller version of what you’d get from the Penguin Ice man. After searching the grocery store, a drug store, AND the liquor store, I gave up and just made them in full-sized cupcake liners. So they weren’t exactly shots, but more like tumblers perhaps? At least it meant more jello-shotty goodness in each cupcake!

I actually decided to buy whipped cream instead of making it myself due to time. So I left the whipped cream can out next to the cupcakes, so everyone could use it as they pleased. I mean, who doesn’t like to add their own whipped cream?!

Jello Shot Cupcakes

Ingredients:
For jello shot cupcakes
1 pkg. white cake mix
1 cup boiling water
1 pkg. (3 oz.) Jello Gelatin, any red flavor (I used cherry)
1 cup Malibu coconut rum

For whipped cream
3 cups whipping cream
2 tsp vanilla extract
4 tbsp granulated sugar

Directions:
1. Make cupcakes according to package directions
2. Fill cupcake liners about 1/2-2/3 full and bake for about 18-20 minutes. Remove from oven and poke holes in the cupcakes with a fork or toothpick.
3. In a separate bowl, stir boiling water into jello powder until completely dissolved, about 2 minutes. Add rum. Spoon over cupcakes. (Don’t be shy with the jello. Be generous! 2-3-4 spoonfuls!)
4. For the whipped cream, place the heavy cream, sugar and vanilla into the bowl of a stand mixer. Using the whisk attachment, whisk together on low until stiff peaks are formed. Change to medium speed and whisk until thick.
4. Let cool before frosting with whipped cream.

Peanut Butter Cupcakes!

Since our half marathon training is coming to an end, we only had to run once this weekend, and it thankfully fell on Saturday. So, this left me with lots of options for my Sunday. I haven’t made cupcakes in awhile, so I figured I’d give them a whirl.

I got the 500 Cupcakes by Fergal Connolly for Christmas, but hadn’t actually made any recipes from the book until today. The book itself is really cute and displays nicely in my kitchen, but I found myself shying away from it and going to the internet to find recipes instead. Well, last night I buckled down and decided on a recipe from the book; Peanut Butter Cupcakes!

The recipe is pretty straight forward – eggs, peanut butter, sugar, butter and flour. I didn’t have any self rising flour, so I added a teaspoon of baking soda. I also snuck a taste of the batter before putting it in the cups, and it seemed to be missing something. So, I also threw in a teaspoon of vanilla extract. Look at me, getting all inventive with my recipes! I decided to use my hand mixer this time, and it was much easier. I still want a stand mixer, though!

The batter itself was really thick. I had trouble getting out of the bowl and into the cupcake wrappers. I wound up using two spoons – one to grab the batter from the bowl, and another to then scrape it off of the first spoon. They looked like messy blobs when they went in the oven, and I was sure they were going to come out looking equally messy. After 20 minutes, I was surprised at how cupcake-like they looked!

The recipe came with a peanut butter inspired icing, but I decided to go chocolate. I mean, what goes better with peanut butter than chocolate? Just ask the people at Reese’s. There was a chocolate buttercream recipe in the book, but I just wasn’t feeling it. I was low on butter, didn’t have any milk, and I didn’t think it was worth a trek to the store, when I have to go later for my weekly grocery shopping anyway. I had some left-over frosting, so I iced one with chocolate, and one with vanilla. Then I remembered I had some semi-sweet chocolate chips. So, I decided to melt them! The cupcakes have a really glossy sheen on them, and they look as delicious as they taste! Though, as you can tell, I need to work on my icing skills.

Here’s the recipe for the Peanut Butter Cupcakes. If you’re in the market for a cupcake cookbook, I definitely suggest this one. There are TONS of variations for each of the recipes, and clearly if you stray a bit, they still work out well!

Peanut Butter Cupcakes

Ingredients:
1 cup (2 sticks) sweet butter, softened
1 cup superfine sugar
2 cups self-rising flour
4 eggs
1 cup crunchy peanut butter

Directions:
1. Preheat oven to 350 degrees. Place 18 paper baking cups in muffin pans.
2. Combine butter, sugar, flour, and eggs in a large bowl and beat with an electric mixer until smooth, about 2-3 minutes.
3. Stir in the peanut butter until well combined.
4. Spoon the batter into the cups. Bake 20 minutes. remove pans from the oven and cool for 5 minutes. Then remove the cupcakes and cool on a rack. Frost & enjoy!
