A Wedded Weekend

On Saturday, my fiancé and I set out to conquer more to-dos on our wedding list. With my mom in toe, we headed up to a florist near our venue to discuss flowers. This is the second florist we’ve met with, and we’re meeting with one more before making a final decision. It’s really hard, because I’m not super picky when it comes to flowers; I don’t have a favorite flower, for example, and I’m really clueless about them too. So, I’m really looking for someone that can use their creativity and the little bit of input I have to make something gorgeous. All I know is that I want bright beautiful green and yellow in my bouquet, with more muted colors for my girls since they’ll be in green. As for centerpieces, I just want something low, and bright. Maybe like this…

After meeting with the florist, we headed to the hotel where we’ll be booking a block of rooms for ourselves and our guests. By booking with that hotel, we also get a deal on transportation for all of our guests to and from the venue, which was extremely important to us. We’re also in the process of finalizing our invitations… Things are starting to come together!

On Sunday, we spent the morning trying to clean up our townhouse, since I have my bridesmaids coming next Saturday for their dress fitting! After that we headed out for a run. We still have it on our heads that we’ll be “running” the half marathon April 17th, and I think my fiancé finally realized that it’s something we’ll be doing together, slowly. On Thursday after my 4-miler, I noticed that when I accidentally hit my shin, I felt pain. Pain very similar to my shin splints in December. Low and behold, I’m definitely on the road to get shin splints again. This time, though, I’m not ignoring it and I’m icing, compressing, rolling, and not increasing my mileage like crazy. I was supposed to run 6 miles Sunday, but kept it at 4 just to be safe. I’ll try and tackle 6 on Tuesday, followed by 2 on Thursday. I can’t seem to catch a break with these injuries!

Since we’re back to running, I’ve welcomed yummy desserts back into our routine. On Sunday evening, I decided to make How Sweet Eats’ Triple Layer Cookies & Cream Crunch Bars. Ohh yes – they were absolutely amazing. Of course, they didn’t look quite like Jessica’s, but they tasted awesome! Everything she puts on her blog looks so scrumptious; I wish I could be that creative in the kitchen. And checkout the sweet plate – these awesome Maleficent (from Cinderella) plates were on sale at Target for 75 cents! So I scored four!

This week’s kitchen adventures were first squashed when, again, the avocados at ShopRite were nowhere near ripe. I’m hoping they’ll be ready sometime this week to use in other recipes, but the homemade sushi I was planning on making Sunday night was a no-go. Maybe next week. But, I’ll be making some veggie burgers and sweet potato fries, falafel, and finally the huevos rancheros I wanted to make last week. Maybe I’ll even bake something else!

A Cake Ball Attempt

I’ve been following Bakerella’s blog for about a year and a half, and have finally gotten around to trying my hand at cake balls. She seriously makes the cutest edible designs on sticks I’ve ever seen! Since my decoration abilities are nearly nonexistent, I decided to keep it simple for my first try. I let the fiancé pick out the flavors, and then got to work.

The actual making of the cake balls themselves is really easy. It’s when you try and get snazzy and decorate them that you actually need some skill. The fiancé decided on a white funfetti cake, with chocolate fudge icing. I was a little skeptical at first with the combination, but it came out really yummy, a little like a marble cake with some extra fudge. I ran into my first problem when it was time to prepare the ingredients to coat them, though.

I thought I had plenty of chocolate chips at home, but it turns out I didn’t. So, I wound up only being able to coat about 8 of them with chocolate. My second issue was actually coating them. I need to do some more research on Bakerella’s blog for some tips and techniques, because this was a disaster! I couldn’t fully coat them (probably because there really wasn’t enough chocolate), so it kind of became a mess. But that’s okay, because they were just for my fiancé and I to enjoy ourselves.

They tasted like really gooey munchkins, if I had to compare them to something. And let me tell you, they’re delicious! I’ve been looking around the past few days to maybe get some proper tools to make some of the adorable cake balls I’ve seen. I did buy that $20 for $10 on Amazon deal from Living Social last week that I think everyone got, and of course it’s burning a hole in my pocket!

So even if you’re like me and aren’t exactly cake decorating savvy, I would suggest making these just to eat as-is because they are awesome. But, if you’re creative I’d suggest checking out Bakerella and trying some of her adorable designs! I’m going to leave out any decoration instructions, just because I’m still working on trying to make that a success. But you can simply melt some chocolate and coat them. I’ll keep you posted on my next attempt!

Cake Balls
– makes about 30-40 balls, depending on how big you make them –

Ingredients:
1 box of cake mix and ingredients to make (any flavor – I used yellow funfetti)
1 container of frosting (any flavor – I used chocolate fudge)

Directions:
1. Bake cake according to box directions
2. Let cake cool completely, then crumble into a big bowl
3. Add icing to crumbled cake, coating completely
4. Form cake and icing mixture into balls (I rolled them, similar to how you’d form a meatball) and place on parchment paper, or sprayed foil on a baking sheet
5. Place in the freezer to harden about 1-2 hours

Wrap it up

With all of the awesome cookbooks I received for Christmas, they each have had quite a few curry recipes. As you know, I’m trying to expand my curry, and specifically Indian food palate. So, when I saw this West Indian Styled Channa Wrap in my The Meat Lover’s Meatless Cookbook by Kim O’Donnel, I couldn’t wait to make it. I was planning to make this on a Thursday night, but per the usual, I didn’t look at the actual recipe instructions, and realized it took about a half hour to simmer. So, I abandoned ship, but came back on Saturday night to try it as I had just a bit more time on my hands.

This was actually the first time working with fresh ginger. My dad doesn’t like the taste of ginger, so growing up it was never included in any meals we had, let alone in the house. So, up until now my ginger relationship has been solely through sushi. As soon as I peeled it and started slicing, I was in love – it just smells so good!

The recipe calls for madras curry, but I don’t have any. I read online somewhere though that you can simply add some red pepper (cayenne) to regular yellow curry instead. This was too boring for me, so I substituted it with garam masala, the mystery spice I found a few months ago after scouring the Asian food market. Aside from cutting the recipe in half (all the ingredients and cook time) and using 10 inch tortillas instead of 8 (we always have 10 inch in the house, since we’re burrito fiends), I followed the recipe.

If you aren’t a fan of spicy foods, I would omit the hot pepper suggestion. I added a jalapeno, and let me tell you, it was SPICY! The cookbook itself says it’s a 4 out of 5 on their spicy scale, so keep that in mind. But it wasn’t unbearable, and still really enjoyable. If it winds up being a bit too spicy, try and add a little bit of white sugar. It sounds weird, but I promise it works!

West-Indian Style Channa Wrap – via The Meat Lover’s Meatless Cookbook
– Serves 8 –

Ingredients:
3 Tbsp vegetable oil
2 cups diced onions
5 cloves garlic, minced
1/2 chile pepper of choice, seeded
1 (2 x 1-inch) hunk fresh ginger, peeled and minced
3 Tbsp curry powder (Madras- style)
1 tsp ground cumin
1/4 tsp cayenne
1/4 tsp ground tumeric
1 tsp salt
2 (15-oz) cans of chickpeas, drained and rinsed
1 package of 8-inch whole wheat tortillas

Directions:
1. In a deep skillet, heat the oil over medium heat. Add the onions and cook until slightly softened, about 8 minutes. Add the garlic, chile pepper, and ginger, and cook for about 2 minutes. Add the spices and salt, and stir well. You’ll end up with a paste.
2. Add chickpeas, plus enough water to barely cover (at least 3 cups). Bring to a lively simmer, then lower the heat and cook at a gentle simmer, stirring occasionally, until most of the liquid evaporates, 50 to 60 minutes. You’re looking for very soft chickpeas with a thick gravy, not soup.
3. Taste for salt and season accordingly.
4. Place a few tablespoons of channa inside  a warmed tortilla. Also great over rice!

Tea Time and a Giveaway!

When I was contacted to try some of Celestial Seasoning’s new Antioxidant Max Green Teas, I jumped at the offer! I’m a huge coffee fan, but I’m partial to tea as well. My fiancé and I will oftentimes have tea with our dessert (a cupcake, a cookie, etc.). We have tins upon tins of loose teas, and quite a few tea packets as well. [Scroll down for entry rules]

The package I received came with four full boxes of yummy tea; Blackberry Pomegranate Green Tea, Sleepytime Green Lemon Jasmine, Blood Orange Starfruit, and Dragon Fruit Melon. They all sounded so exotic and fruity, I didn’t know which one to try first! In addition to their delicious flavors, they boast that each serving contains 20% of the daily recommended intake for Vitamin C! I don’t know about you, but in these super cold dreary months, I could certainly use some extra Vitamin C to keep the sniffles away. They are also calorie (the Sleepy time does have some calories) and gluten free, as well as Kosher certified.

Once I opened the package, I was intrigued by the actual tea packets that also included the best sencha brands. They aren’t individually wrapped, rather they come in one big pouch, and are sans strings and tags. According to the information sheet that came with the teas, this allows them to save more than 3.5 pounds of waste each year! And, of course, the packaging is made of 100% recycled materials.

So, onto the flavor! I decided to have a cup of the Sleepytime Green Lemon Jasmine, while my fiancé sampled the Blackberry Pomegranate Green (he’s obsessed with pomegranates). As soon as I put my fiancé’s tea bag in his warm water, I could instantly smell the fruit, and it smelled good! They each only take 2 minutes to steep, which was surprising to us, as all of our loose teas take anywhere from 5 to 8 minutes. Even though that seemed like a short amount of time, it was plenty of time for the tea bags to transfer the flavor into our water. We both drink our tea without any adders, so it was a great way to really get a taste of the flavors. The Sleepytime was the perfect end of the day tea (since it is caffeine free) – the lemon and jasmine were comforting, and the green tea added a nice refreshing quality. My fiancé’s was fruity! When I took a sip I felt like I should have been laying on a tropical island, not in 10 degree weather. The smell and the actual flavor were right on par, and it wasn’t too much – it was just right. I can’t wait to try the other two flavors.

I’m Back!

Have no fear – I haven’t abandoned you! I just returned home from a wonderful week in Orlando, Florida where my time was spent eating, playing, and running in Walt Disney World! Since we had a great dining plan, I have plenty to write about in terms of our awesome meals, and of course a fun race re-cap for the RunDisney Half Marathon.

Unfortunately since we got home late Wednesday night and I didn’t have time to blog while away, I’m a bit backed up in terms of all of the posts I want to do. So, sit tight, and I promise they’ll be coming in the next few days.

But here’s just a preview of the types of things I had the pleasure of eating…

Lackluster Cooking

The week between Christmas and New Years is always packed with as many outings and visits with friends as possible; dinners and drinks here, shopping trips there, and just time spent with those you care about. This oftentimes requires you to either cook for the masses, or spend little to no time in the kitchen. For me, it was the latter.

This year, our company observed the Christmas holiday the following Monday, giving us off when most of our business partners were hard at work. It worked out perfectly, though, since there was a huge snow storm that Sunday, leaving everyone trapped in their homes anyway. Leaving my fiancé at home to use up the last bit of his 2010 vacation days, I trudged to work on Tuesday and Wednesday, less than enthusiastic. The end of the year can be a crazy time in time and attendance and payroll, so that coupled with the holidays causes a serious time crunch. On Thursday, however, I took the day off to go wedding dress shopping! My mom, sister, and I headed to Priscilla of Boston in Short Hills to check things out. You can check out my pre-shopping trip video here. The dresses were pretty, but I wasn’t overly impressed with anything. It was a fun trip, but I didn’t say yes to the dress.

Friday (New Year’s Eve) was a day of relaxation and baking – I whipped up some pink champagne mini cupcakes, inspired by both Boozy Baker and Booze Cakes (two awesome books I got for Christmas!) to bring to our friend’s NYE party. After anxiously watching my fiancé light off fireworks from across the street and devouring lots of yummy appetizers, it was 2011! The new year started off with a 9 mile run, followed by a trip to Sonic to refuel (they have veggie burgers now!).

My mom, sister, and I reconvened on Sunday for another dress trip – this time to David’s Bridal. I had high hopes, hearing stories from many girls who found their dream dresses at David’s after searching high and low. While I didn’t have an overwhelmingly emotional experience (I’m not that kind of girl), I did find my dress! And while I can’t show you the dress I purchased, I can show you the dress I didn’t pick. And believe me when I tell you, my dress choices were all over the place. You name the style, I probably tried it on.

My last day off ended today, Monday, as my company again observed New Year’s Day the following Monday (win!). While it’s sad to see the holiday season come to an end, I’m heading in to work tomorrow for only one day. Why? Because I’m heading to Disney World bright and early Wednesday morning for a week of fun, and to run the Walt Disney World Half Marathon! I’m really excited to be heading back just under a year from the last time I was there, where I got engaged! I’ve been going to Disney World since I was 5, almost yearly, and get giddy like a child every time. Even though I’m a little injured (though getting better), the race is just going to be about the experience – I can wait until April to knock out a PR.

So, needless to say my cooking has been almost non-existant this week, aside from making Belgian waffles with chocolate chips and coconut flakes one morning, breakfast burritos a few other mornings, and a super simple stir fry for dinner one night. Tonight’s menu is a giant salad and some fish sticks – classy, I know. But somewhat fitting – a child-like meal before heading to the most wonderful (and childish) place on earth!

Semi-Homemade Pizza

While many foodies are purists, when it comes to weeknight dinners, I have no problem admitting my shortcuts. There’s even a show on the Food Network with “Semi-Homemade” in the title. Sure, I don’t wear cute cardigans and prepare my semi-homemade goodies for parties (most of the time) but the general idea is there. I’d say at least one or two times a week I cheat the system and use something that someone else made for me in my meal.

The past few weeks have been slow on the blogging front just because I’ve been so busy. I haven’t had the opportunity to try many new dishes, therefore leaving me with little to talk about – or so I thought. Originally when I started this blog, I figured it would be to post new recipes I try, create, etc. I’ve realized though, that while there are always new and great recipes, there are some I’d like to have more than once! So, sometimes I have a lot of content, sometimes I don’t. I’m in the process of trying to really figure out how I want to handle my blogging. Do I want to do something more on a daily basis, like some of my favorite blogs, Peanut Butter Fingers, Eat Drink Run, and Healthy Tipping Point? Or, do I want to stick to new recipes, yummy restaurants, and things like that? I guess I’ll just have to try it out. Or, maybe I just need to find more time to cook!

Back to the pizza. I’ve found that most refrigerated crusts I’ve purchased are more than passable. It also helps that they come in two packs, so I’m able to get two meals out of it – whether it be two dinners, or maybe a dinner and a breakfast (hello breakfast pizza!). With a few random ingredients in the fridge, I threw together a pepperoni, onion, and pepper pizza with Italian seasonings. In the time it would have taken me to pull up a menu, place the order, drive to pick it up, and then eventually be home to eat it, my entire meal was done. The great thing about pizza is that you can throw almost anything on it. Last week we had a pizza with BBQ sauce, and Monday night was regular tomato sauce (with huge chunks of garlic). You really can customize it just how you crave.

Now that I’ve made a more traditional, and Southwestern styled pizza, I think it’s time to get more creative. I think my fiancé, our wallets, and most importantly our bellies, will welcome a more frequent rotation of homemade pizzas into our lives!

Semi-Homemade Pizza
– Serves 2-4, depending on how hungry you are!-

Ingredients:
1 premade pizza crust (found in the refrigerated section)
1/2 yellow onion
1/2 green pepper
1 cup any kind of tomato sauce
2 cups shredded cheese
Pepperoni (amount to your liking)
1 Tbsp red pepper flakes
1 Tbsp oregano
1 Tbsp garlic powder
2 Tbsp vegetable oil for sautéing

Directions:
1. Preheat oven to 425 degrees
2. Heat pan with oil, and while warming up, slice onion and pepper to desired size. Once pan is warm, add onions and peppers, sauté about 5-10 minutes, adding seasoning half way through.
3. Pour sauce onto pizza crust, spreading evenly. Top with 1 1/2 cups of cheese, followed by pepperoni, and then onion and pepper mix. Layer last 1/2 cup of cheese on top.
4. Bake at 425 for 10-15 minutes, until crust is golden brown (you can lay it directly on the rack)

Product Review: Ghiradelli Luxe Chocolates

Like I mentioned a few weeks ago, blogging rules. Specifically, food blogging. As a Featured Publisher and member of the Tastemaker program on Foodbuzz, I get to try yummy things every so often. A few weeks ago, I got a sample pack containing three flavors of Ghiradelli’s new luxe line of chocolates.

I’m a huge chocolate fan, so I jumped at the offer for a sample. I’m not big on candy, but I’ll never turn down chocolate. I especially won’t turn it down when there’s nuts involved. The three pieces I received were milk, hazelnut, and almond. Even though they were just little squares of chocolate, being the good fiancée that I am, I shared.

I was least excited about the milk chocolate, and most excited for the hazelnut. I’m a serious fan of hazelnuts, and it’s my go-to coffee flavor. I like almonds, too, but wasn’t expecting anything special, as a lot of chocolates have an almond variation. While milk chocolate is the most common, I always gravitate to dark – milk is just average in my eyes. So I started with my least favorite, and it was a great start. I knew that even if it didn’t get any better, it was at least pretty darn good! As I continued on to almond, the flavor grew. For both the almond and hazelnut, there was actually a lot of nut in the chocolate. Usually, the additional flavor is minuscule, but Ghiradelli didn’t hold back. Of course, hazelnut wound up being my favorite, but it barely won out over almond. While savoring each square, I began dreaming up recipes where these chocolates could be melted down and combined into pure deliciousness.

After sharing with my fiancé, I was disappointed there wasn’t more. The chocolate is super rich and creamy, in a simply decadent way. It definitely earned it’s “luxe” name. I’m looking forward to getting some to enjoy as a treat every so often!

Blogiversary!

I totally missed the one year anniversary of my blog! I’m so embarrassed! Here I was thinking the anniversary was some time in October, but oh I was wrong – my first official post was on August 27th, 2009!

I’ve always been in love with writing; when I was younger I used to play with different programs that would let you make mock news papers. I kept journal after journal, and you could always find me writing notes to friends. I’m still the ring leader when it comes to group e-mails, and you can ask my fiancé – I’m a big proponent of hand written notes. I’m a word nerd and proud of it. I may not always follow the proper MLA or APA writing styles, but I do try my best to write fluidly and in a way that anyone reading would enjoy.

I don’t think I have a huge following, but that’s okay. I’m writing because I love it. Sure, it’d be a great job either full time or on the side to rake in some extra moolah, but that’s not the point. I’m here to share with you my love for cooking and eating through writing! So what’s gone on this past year? I don’t even know where to begin.

Since starting the blog I created a Twitter account that was used pretty sparingly at first, as I already had a personal account as well. Since then, though, after finding so many great reads when it came to cooking, eating, blogging, and running (and some virtual friends, too!), I’ve almost completely abandoned my personal Twitter and stuck to good ‘ole FoodosaurusRex. I’ve also had the opportunity for three giveaways (one is going on right now – so go enter!). I’ve become a runner and completed my first half marathon and am training for two more. I took a trip to Chicago and fell in love with the city. I started school again this past Spring. And most importantly, on an amazing trip to Disney World, I got engaged!

There has been a lot of deliciousness consumed in the past year, and a lot of miles run. I have no intention of slowing down any time soon, so keep reading! And thanks for everyone that does read – it’s nice to see my blog stats and know that there are people out there reading what I’ve got to say, even if it is just about food (nomz).
