Veggie burgers and Mexican BBQ

Yesterday was seriously delicious.

My parents and I decided to go to lunch in New Brunswick to catch up and talk wedding business. My dad works at Rutgers, so everyone is pretty familiar with the food options in the area. After much debate on what we wanted, we settled on Old Man Rafferty’s. Though I hadn’t been there in easily 10 years, I remember it being pretty good.

I started off with a coconut flavored iced latte. It was topped with
real whipped cream and absolutely delicious. For my entree, I went
with the veggie burger paired with sweet potato fries. My mom got the shrimp salad “boat” and my dad the chicken salad “boat.” My parent’s meals were paired with a Greek salad and pita chips, and looked awesome. My veggie burger was really good. It had a nice char-grilled flavor, but wasn’t over-done. At one point I really questioned if it was veggie – it was impressive! The fries were sliced thin and had the perfect crisp. It was served with a cucumber ranch dip that I used both for my burger and my fries.

Later that evening we decided to head to The Grub Hut in Manville with the usual foodie suspects. BBQ and Mexican in one place?! Not only does it sound amazing, it is amazing. I don’t even know where to start with this place. It’s nothing special on the outside, and even when you walk in; there are a few table and chairs on either side of the doors, and then the kitchen area is wide open with metal everywhere – they don’t hide anything, and they don’t go for looks either. But when the food is that good, does it really matter what the place itself looks like? If you are ever in the mood for smoky, excellently seasoned and perfectly cooked food, and A LOT of it, then I would absolutely suggest The Grub Hut. They actually used to be called The Rub Hut, but added a G in front, probably for the best.

In terms of their menu, it’s pretty impressive; they offer brisket, chicken, pork, Texas link, and ribs all done either in a traditional BBQ way, or Mexican style and served up either in a burrito, flauta, taco, enchilada, or chimichanga. You can even order the mother of all combos and have some BBQ and Mexican heaven together. They offer individual sized meals as well as those you can share with a table, such as a THREE POUND burrito!

The meal started off great with nicely seasoned tortilla chips and an awesome salsa. It is super chunky, and spicy and tangy in a way that most salsa’s seem to miss. I went for the chicken chimichanga, while my fiancé got the ground beef jumbo burrito. They were both HUGE! I was really pleased with my choice of chicken; it was smoky and definitely had a BBQ flavor, but also had a serious kick of Mexican spices. Shoved into a huge tortilla that was fried with rice, beans, cheese, lettuce and tomato paired with some sour cream and guacamole = heaven. I only ate about half, and am saving the rest for tomorrow night’s dinner! Everyone else at the table went for the BBQ side; a BBQ chicken sandwich, a platter called “Hog Heaven” that had chorizo, ribs, brisket and pulled pork, and a Pit Master platter that was similar. Most of their entrées come with two sides; they have everything from fried plantains and rice and beans to “loco” fries doused in jalapeños and cheese.

Needless to say we all waddled out of the restaurant, and headed not home, but to Rita’s. Yes, we’re gluttons for punishment and decided to stretch our stomachs just a little more. While everyone else went for ice, I got myself some vanilla soft serve with rainbow sprinkles – my own personal heaven. I only finished about a quarter of it, but it was well worth every bite.

Thankfully, I went for a four mile run today and watched myself in terms of eating, since yesterday was a serious glutton fest. But what can I say? You need one of those every once in awhile!! And I’m definitely planning on going back to The Grub Hut to enjoy some more Mexican BBQ in the future!

An open letter (of dissapointment) to Dunkin Donuts

My dearest Dunkin Donuts,

I’m writing to you as one of your biggest fans to let you know I’m dissapointed. How am I one of your biggest fans? You can look right here, where I defended your awesomeness versus Starbucks. Yesterday, May 11th, was advertised as “Free Iced Coffee Day.” Sure, you said “at participating locations” which ususally means most. I’ve gotten myself an iced coffee on this day for years.

This year, though, New Jersey locations were not participating. Matter of fact, according to the Huffington Post, only fourteen locations were. Not states. Locations. Do you have any idea how many Dunkin Donuts there are around here?! Of course you do, you own them. So imagine the chagrin of your loyal customers who were looking forward to a little pay back for supporting you so whole-heartedly.

Take my own family, for example. My mom LOVES Dunkin Donuts coffee. Swears by it. Getting it is a treat, but one she indulges in often. As my sister and I cultivated a love for coffee over the years, we got in on her weekend routine of Dunkin. I continued the tradition in college, and once I got into the “real world” often treat myself on Friday mornings. We also excitedly give (and receive) numerous gift cards for various occassions. Even my office loves Dunkin Donuts. People often bring in munchkins or boxes of donuts, and whenever possible, they buy the Dunkin coffee for our own coffeemaker.

That being said, I find it rather dissapointing that the free iced coffee day that I’ve grown to know and love was publicized per the ususal, but not followed through on. Later yesterday I saw a tweet from Dunkin Donuts appologizing for the miscommuncation. That’s it? Really? How many people do you think actually went to a franchise location excited to get a small iced coffee, only to be dissapointed?! I know both my mom and sister were upset about it. In the case of New Jersey, you lucked out. It’s been cold and rainy the past few days, so I don’t think people were on the hunt for iced coffee to the degree they would have been if we had temperatures from a week ago. Regardless, you made a promise you didn’t keep.

So, next time I’m ready and willing to bat for your team versus the Starbucks team, I might think twice. I mean, at least Starbucks is offering frappucino happy hour until the 16th. And they aren’t making promises they can’t keep. At this point, you’d almost be better off going back to Rachael Ray as your spokesperson. And we all know how much America loves her.

Honestly, I love your coffee, and could never break up with it. But know I’m like a mother dissapointed in their child. I hope you can right the wrong, and give back to the Dunkin Donuts coffee lovers who support you. We’re all crabby we didn’t get our dose of coffee yesterday – you yourselves say us Americans run on it. So don’t deprive us!

Give Away Winner!

Though I didn’t have many entrants, the decision was hard! Some entries were funny, others reminisced about childhood memories, and others were yummy recipes. But, as promised, I made my decision after the contest closed last night (Sunday) at 9pm EDT.

And the winner is: John “The Legend” not to be confused with John Legend. The selection is two-fold. One, his recipe actually sounds really good, and I’m tempted to make it. Two, he just so happens to be my co-worker, and I know for a fact eats the most ridiculous things for dinner, but is just starting out on his own culinary adventure. What type of ridiculous things, may you ask? A jar of peanut butter. Or a box of animal crackers. Oh, the life of a bachelor. So, I figured John could use it the most!

Virgil’s BBQ: Smoky Goodness

Last night a group of us headed into the city to have dinner at Virgil’s BBQ in Times Square. Feeling super touristy, we got the ultimate hit of that when we bought our round-trip NJ Transit tickets. For both my fiancé and I to travel from our train stop in Edison to New York Penn Station, we each paid $24.50. Yes, you read that correctly. Almost 50% more than we paid before the price increase (it was only about $17.50 before!). Needless to say, our trips to the city will be a little less frequent, and probably by car for the foreseeable future.

Despite that little road bump, we definitely enjoyed our dinner. We started off with some hush puppies for the table which were AMAZING. I typically see hush puppies in a ball-like form, but these looked more like mozzarella sticks. They were served with a maple-syrup butter, and I had to use serious restraint not to eat the entire plate. Unfortunately, they were super filling, leaving me little room for my actual meal. As for drinks, they have a lot to offer in terms of beer, wine, margaritas, and mixed drinks. My fiance and I went for their beer flight of Magic Hat (Circus Boy, #9, and Virgil’s), while others got the “June Bug” mixed drink, lemonade, and root beer.

As always, I spent some time prior to our trip familiarizing myself with their menu. It’s weird, I know, but I like to think by previewing the menu beforehand, my decision making is made easier once at the actual restaurant. I decided on the Fish Fry, which was actually their special for the day; it had calamari, scallops, shrimp, monk fish and cod served with homemade waffle chips, cornbread, and two types of creamy tartar sauce. It was really good, but I barely made a dent in it! My fiance went with the two meat combo of Memphis spare ribs and Texas brisket and two sides of macaroni and cheese and mashed potatoes. Some of our other table mates had the barbeque chicken, smoked ham, fried chicken po’boy, and the “pig out” which came with a little bit of everything – bbq chicken, Texas link, ribs, brisket, and two sides!

I don’t think there was much conversation during, or even after our meal – everyone loved everything, and they were STUFFED! We had little room or motivation for anything afterwards, so we wound up heading back home, feeling old and lame.

I have to be honest that I was a bit worried prior to the trip. Everyone aside from me had been there before, but I had an inkling that based on it’s location (46th St. right across from the giant Toys R Us in Times Square) that it was going to be gimmicky, and really over priced. Turns out that I was almost completely wrong. Yes, it was somewhat expensive, but we got A TON of food, and it definitely wasn’t gimmicky like I expected. So, I would absolutely go back. But this time, I’d get something that was in one of their 1400lb capacity smoker!

Cupcake Earrings!

I’m obsessed with cupcakes. But you knew this! And if you didn’t for some strange reason, you can read about the origin of that obsession HERE! [which you should if you haven’t!] That being said, I just had to share the CUTEST earrings I found on Forever21. Considering they were only $3.80 I was tempted to buy multiple pairs, but I settled for one. I can’t wait to wear them… maybe with the deliciously sweet cupcake necklace I got for Christmas!

Yet Another Quickie: Hormel Chili

In our constant effort to save time and money, my fiancé and I have come up with a few weekly staples that we like to rotate. Aside from the tortellinis and the always delicious burrito [which we had Monday, shh], we also have some Hormel chili on hand. Now, I’m not talking just your regular can of beans and/or meat, I’m talking gourmet style (well, for a can that is).

Hormel’s “Chili Master” line of chili comes in four variations; chipotle chicken, roasted tomato, white chicken, or three bean. Often times they’re on sale at the store, 3 for $5 or something of that nature. So, when they are, we stock up. I’ve had three of the four (no white chicken yet), and they are all really good. Clearly good enough that we keep buying them!

There’s a lot of great things about chili. It can be eaten alone, or on top of a starch; a potato, rice, pasta, or in tonight’s case, whole wheat couscous. I know, I know, it sounds totally weird. But it works! Typically we have the chili with just some long grain rice. Tonight, however, after I got back from my run and was waiting for the man to return from playing soccer, I decided to make it with couscous. Now, this isn’t any type of couscous – it’s whole wheat and from one of my favorite stores, Trader Joe’s! It takes about 8 minutes to make, from boiling a cup of water with butter to then letting it sit for 5 minutes.

Pairing the lightly spiced chili with it’s chunky pieces of black beans, corn and tomato on top of seriously fluffy and buttery couscous was a really great combination. Considering I’m not a huge rice fan, this was a really nice change of pace. My fiancé even made note that it wasn’t anything like he’d ever had before, but in a good way. I never seem to make couscous to serve with “normal” things. I’m a big fan of mixing chunky salsa into it, too.

I like to think I eat decently (most of the time) and I think the chili covers a lot of my dietary needs (served with a salad, of course)! Plus a little bit goes a long way. So whether you’re having it alone or as a topper to a starch, you’ll definitely be full quickly, and it isn’t that type of full that wears off in an hour – it sticks around.

I can’t recommend this enough for a quick and easy meal. Whether you’re in a hurry or just don’t feel like actually making anything, Hormel Chili is a super quick and easy way to enjoy something that would typically take hours. This way, you can let Hormel do all the work for you! It’s nice to take a night (or in my case, week) off from slaving in the kitchen every once in awhile.

Jalapeño Crab Cakes with Slaw & Salsa

I just so happened to super crabby all week, so I thought, what a better way to end the week then with something involving crab meat?! I’ve actually had this particular recipe in my hands for about a year, but never got around to making them. Since I’ve had it for so long, I of course don’t remember where I found the recipe, but when Googling it, it did come up on Epicurious, so we’ll stick with that!

I’ve never really been a huge water-creature fan; eating, swimming with, smelling, etc. I know I grew up loving shrimp and scallops, but at about six or so I swore them off. I guess I had a few bad experiences, like my great-grandmother pointing out a vein in a shrimp to turn me off from all seafood. As I got older, though, I decided to venture back out and sampled some salmon, tuna, crab, and other similar seafoods. Realizing they had some health benefits, I decided I would keep shrimp out, but let everything else in.

Since I don’t really buy seafood that often, I forgot how expensive it is! A pound of crab meat was almost $20! Thankfully the rest of the ingredients were cheap, and I have left overs for tonight’s left-over-arama!

Making the crab cakes was easy; I was just petrified of cutting the jalapeños. When I was younger I played with a pepper in a neighbor’s yard and made the mistake of touching my face afterwards without washing my hands. Believe me, that will never happen again! But then when talking to my mom about the recipe, she told me just cutting the peppers burned her hands so badly she need to put them in ice water. So what did I do? I took two plastic sandwich bags and put them over my hands, and chopped away!

As you all know, I’m impatient, so quick recipes are favorites of mine. Each of the cakes only take about 8-10 minutes, depending on how large you make them. Because my pan only fit 2 at a time, I turned on my oven (only to 200 degrees) and put the cakes that were already done in the oven to keep them warm, while I worked on the others.

We weren’t sure what to have with the cakes aside from the slaw and salsa, so I just grabbed a bag of the steam-fresh redskin potatoes that Green Giant makes. They were okay – I wasn’t a huge fan of the butter sauce, but it worked well enough. It was a huge meal – two crab cakes with slaw, the potatoes, AND a salad?! I was stuffed, in a good way.

The cakes had just the right amount of spice from the jalapeños without being overpowering or not noticeable, and the panko bread crumbs added a really nice crunch. And instead of using a typical mayo-based remoulade to go with them, a nice medium-spiced salsa was perfect.

Jalapeño Crab Cakes with Slaw & Salsa
-Serves 4-

Ingredients:
1 pound fresh crabmeat, picked over, patted dry
1 1/3 cups panko (Japanese breadcrumbs)
2 tablespoons chopped seeded jalapeño chiles (I used one)
1 1/2 teaspoons coarse kosher salt
4 large eggs, beaten to blend
1/4 cup canola oil or other vegetable oil
4 cups (about 6 ounces) coleslaw mix [I used Rainbow mix]
2/3 cup purchased salsa
1/3 cup sour cream
Lime wedges

Directions:
1. Line rimmed baking sheet with waxed paper. Combine first 4 ingredients in large bowl. Stir in eggs.
2. Using moist hands, shape mixture into 8 cakes, each about 3/4 inch thick. Arrange cakes on prepared sheet.
3. Heat 2 tablespoons oil in each of 2 medium skillets over medium heat. Add 4 cakes to each. Cook until golden brown and cooked through, about 4 minutes per side.
4. Mound slaw mix on 4 plates. Top each serving with 2 cakes. Serve with salsa, sour cream, and lime wedges.

Boozey Cupcakes Part 2: Jello Shot Style

On Saturday, my fiancé had his birthday party, which was dessert themed. Being that it was a party and some type of confectionery treat needed to be made, I went the route of a booze-infused cupcake. After my New Year’s Eve hit with my Guinness & Bailey’s buttercream cupcakes, I figured I could give a new recipe a shot (no pun intended!).

It’s amazing how many different recipes incorporate alcohol. There’s even an entire bakery, Butch Bakery, that makes “manly” alcohol infused cupcakes! I found my recipe at ilovecuppycakes.com [What a cute blog name!]

Because we were hosting the party at our place and spent all of Saturday morning & afternoon cleaning and running errands, this recipe was perfect because it called for cake mix. I know that’s cheating, but we were seriously crunched on time! So after making the cupcakes from the box, I moved on to the Jello, by making it half with water, and half with coconut rum. Once the cupcakes cooled, I simply spooned the mixture over them. Be smart about this though because it makes a mess! I thought ahead and put down some paper towels on a serving tray first, and I’m really glad I did. I left the rest of the Jello to congeal in the fridge if anyone wanted it later.

The hardest part of the recipe, you may ask? Finding the cups to put them in! They’re the paper medicine-like cups; a smaller version of what you’d get from the Penguin Ice man. After searching the grocery store, a drug store, AND the liquor store, I gave up and just made them in full-sized cupcake liners. So they weren’t exactly shots, but more like tumblers perhaps? At least it meant more jello-shotty goodness in each cupcake!

I actually decided to buy whipped cream instead of making it myself due to time. So I left the whipped cream can out next to the cupcakes, so everyone could use it as they pleased. I mean, who doesn’t like to add their own whipped cream?!

Here’s the recipe [from iheartcuppycakes], and happy (and safe) boozey nomzing!

Jello Shot Cupcakes

Ingredients:
For jello shot cupcakes
1 pkg. white cake mix
1 cup boiling water
1 pkg. (3 oz.) Jello Gelatin, any red flavor (I used cherry)
1 cup Malibu coconut rum

For whipped cream
3 cups whipping cream
2 tsp vanilla extract
4 tbsp granulated sugar

Directions:
1. Make cupcakes according to package directions
2. Fill cupcake liners about 1/2-2/3 full and bake for about 18-20 minutes. Remove from oven and poke holes in the cupcakes with a fork or toothpick.
3. In a separate bowl, stir boiling water into jello powder until completely dissolved, about 2 minutes. Add rum. Spoon over cupcakes. (Don’t be shy with the jello. Be generous! 2-3-4 spoonfuls!)
4. For the whipped cream, place the heavy cream, sugar and vanilla into the bowl of a stand mixer. Using the whisk attachment, whisk together on low until stiff peaks are formed. Change to medium speed and whisk until thick.
4. Let cool before frosting with whipped cream.

Cupcake Apron!

Earlier this week, I ordered myself a cupcake themed cooking apron. I’ve always wanted one, but never knew where to get one, exactly what print I wanted, and what a good price was. To me, picking out a style and print was the hardest part. They’re almost like scrubs for foodies!

This particular apron is from Flirty Aprons. They were having a sale earlier this week, so I picked up this guy:

How cute is that! It’s the “Frosted Cupcake” design and is currently $32.95. And, if you order before 2pm EST, they’ll ship it out USPS that day. I ordered it on Monday morning, and got it today (Wednesday)!

I’m planning on breaking it out for my kitchen endeavors on Friday; I’m making jalapeño crab cakes for my fiancé [with a side of Cupcake Vineyards wine]! I definitely think this will add some pizazz to my daily kitchen tasks… not to mention I don’t need to worry as much about ruining my clothes, since I’m always all over the place and a mess!
